This healthy avocado caprese salad recipe salad is what I call a classic with a modern day twist. It has a little of something everyone loves. It's simple, cheap, and seriously thrown together in under 5 minutes.

Next, you're going to take your avocado and cut it in half, want a tip for taking out the pit? Gently hit the knife across the pit and twist! I pops right out! Then cut the avocado and spoon it out.

Add in the rest of your ingredients, mozzarella balls also halved, I used the plain, but you can use the marinated if desired. Chopped fresh basil, lemon juice (keeps the avocado from browning) a little EVOO, and a generous amount of salt and pepper!

Healthy Summer Avocado Caprese Salad
Ingredients
- 1 avocado diced
- 1 cup of fresh mozzarella balls halved
- 1 cup of cherry tomatoes hlaved
- 2 tablespoons of fresh basil chopped
- 1 teaspoon of lemon juice
- 1 tablespoon of olive oil
- salt and pepper to taste
- balsamic glaze to taste
Instructions
- In a large bowl add in avocado, mozzarella, cherry tomatoes, and basil.
- In a small bowl, add in lemon juice, olive oil, salt and pepper and mix.
- Add lemon mixture to avocado and toss ingredients together.
- Serve immediately and add balsamic glaze when serving.
