    Avocados have been trending for a great reason, they're amazing for you! As far as I can recall, avocados are a part of dinner every.single.day ... until I grew up and they now cost over $1 for a small avocado that never seems to ripen. But, major but, when you're able to find the perfect avocado, it's like food heaven! Trying to get my kids to eat healthier has been challenging, but they all loved this healthy summer avocado caprese salad recipe that's also perfect for putting in jars for lunch on the go!

    This healthy  avocado caprese salad recipe salad is what I call a classic with a modern day twist. It has a little of something everyone loves. It's simple, cheap, and seriously thrown together in under 5 minutes.

    Next, you're going to take your avocado and cut it in half, want a tip for taking out the pit? Gently hit the knife across the pit and twist! I pops right out! Then cut the avocado and spoon it out.

    Add in the rest of your ingredients, mozzarella balls also halved, I used the plain, but you can use the marinated if desired. Chopped fresh basil, lemon juice (keeps the avocado from browning) a little EVOO, and a generous amount of salt and pepper!

    Stir it together and either put into jars and refrigerate right away (to be eaten the same day), or serve right away. Add some balsamic glaze, yes glaze.... it's sooooo good mi gente, when ready to serve!

    Ingredients

    • 1 avocado diced
    • 1 cup of fresh mozzarella balls halved
    • 1 cup of cherry tomatoes hlaved
    • 2 tablespoons of fresh basil chopped
    • 1 teaspoon of lemon juice
    • 1 tablespoon of olive oil
    • salt and pepper to taste
    • balsamic glaze to taste

    Instructions

    • In a large bowl add in avocado, mozzarella, cherry tomatoes, and basil.
    • In a small bowl, add in lemon juice, olive oil, salt and pepper and mix.
    • Add lemon mixture to avocado and toss ingredients together.
    • Serve immediately and add balsamic glaze when serving.
