    Quick & Easy Chicken Noodle Soup

    All over my Facebook feed, there's someone posting about a stomach bug hitting their house. Unfortunately, as I type this, my family is in the same boat. My oldest and youngest daughters are sick. What better way to help someone who's sick the day after Christmas, than with a bowl of quick and easy chicken noodle soup, that's ready in 30 minutes.

    How To Make A Quick And Easy Chicken Noodle Soup In 30 Minutes

    With five kids, time is of the essence. And when you're busy taking care of one or two kids who are under the weather, remembering to defrost meat is not on your radar. This is when leftover chicken or better yet, a quick and easy $5 rotisserie chicken from your local supermarket comes in.

    Rotisserie chicken has been the saving grace of dinners many, many times. Chicken salad anyone? You can even make chicken tacos or taquitos (like my pork taquito recipe) with a side of Spanish rice on Taco Tuesday.

    Do you have memories of chicken noodle soup growing up? My mother would always make sopa de pollo, but hers naturally has Latin flavors, I will share that recipe one day soon.

    This recipe is made with chopped carrots, celery, and egg noodles. I swear that the egg noodles make this dish. So much comfort in one bite!

You can definitely omit the water and just use stock or broth, but I'm frugal and on a tight budget, water for the win!

    Hopefully, my daughters will devour this -slowly. My phone is dead, if not, I would have shot a few photos of them. Banana looks so peaceful beside me as she's sleeping under a heavy white comforter, with her hot pink with silver glitter painted little nails.

    Ingredients

    • 4 cups of cooked chicken
    • 4 cups of water
    • 32 oz chicken broth
    • 2 stalks of celery chopped
    • 2 cups of carrots chopped
    • 2 garlic cloves chopped
    • ¼ cup of onion chopped
    • 1 teaspoon of salt or to taste
    • ½ teaspoon of black pepper
    • ½ teaspoon of oregano
    • ½ teaspoon of paprika
    • 3 cups of egg noodles
    • ¼ cup of parsley chopped

    Instructions

    • In a large pot over medium heat add in all of the ingredients, except for egg noodles and parsley.
    • Cook for 15 minutes. Add in noodles and parsley, cook until noodles and vegetables are tender. Serve hot.
