As I prepare this pineapple jalapeno sweet and spicy shrimp ceviche for my family, I can't help but realize that it has almost been two years since Hurricane Maria ravaged Puerto Rico.
I have Alexa playing my favorite Latino artist Marc Anthony in the background; and as I'm pouring my Clamato Tomato Cocktail Picante into my glass bowl with the ceviche ingredients, I can't help but feel an admiration for Marc Anthony. At a time when Puerto Rico was without power and a voice, he stood up with more incredible Latino artists to create an alliance known as "Somos una Voz" which means "We are one voice".
Puerto Rico is an island with rich culinary history. We love our fresh ingredients, and love fish recipes. Ceviche is a staple in many houses and on the mainland, here in the US making ceviche recipes is a way that we keep the Puerto Rican culture alive, even if we're many miles away.
What is ceviche?
Ceviche is a seafood dish that originated in Peru. It's a seafood dish that traditionally uses raw fish or shrimp that is cured in a citrus bath of limes/lemons, vinegar, and Clamato Tomato Cocktail. Traditional ceviche also has finely diced raw onions, a variety of peppers, and cilantro. Anything more than that turns into a unique ceviche recipe. Today, we're going with a sweet and spicy shrimp ceviche recipe. This is perfect for celebrating Hispanic Heritage Month!
Shrimp Ceviche Ingredients
We all have a product that we love and keep on hand for multiple recipes. In our family Clamato Tomato Cocktail is that product! Clamato is the authentic tomato cocktail beverage that spices up any party or family get together. In the summer, we love to use it to make shrimp Ceviche and the original Michelada. In the winter, creating a comforting chicken stew that's bathed in beer and Clamato Tomato Cocktail makes the house smell amazing, and keeps our family culture alive -even if there's three feet of snow outside!
Ingredients in our pineapple jalapeno ceviche recipe
- shrimp
- crab meat
- chopped pineapple
- diced jalapeno
- diced tomatoes
- diced cucumbers
- diced red peppers
- green olives
- diced red onions
- pimentos
- cilantro or parsley
- Clamato Tomato Cocktail
- lime juice
- White Vinegar
- salt
- pepper
- cumin
All of these flavors are combined in a bowl, covered, and refrigerated overnight. We're using cooked shrimp, but if you're using raw shrimp, I would only cure the shrimp with vinegar, limes, salt and pepper for a minimum of four hours before adding remaining ingredients.
How do you know when your raw shrimp is cured for ceviche?
Your shrimp is cured when it is no longer gray, and it is pink and white throughout.
Where can I buy ingredients for ceviche?
I bought all of my ingredients to make shrimp ceviche at my local Walmart Super Center. You can use the Walmart Grocery Pickup app to order from home and pick up for convenience, and it is free! I do this a minimum of once a week! For the Clamato tomato beverage, there are four product options for making shrimp ceviche:
- Clamato® Tomato Cocktail Original
- Clamato® Tomato Cocktail Picante
- Clamato® Tomato Cocktail Limon
- Clamato® Tomato Cocktail Preparado
I usually pick up the Limon one at my Walmart, but I decided to give the original and picante a try to switch it up. I have to tell you, the Universe knew what it was doing because the Clamato Tomato Cocktail Picante was PERFECT for this shrimp ceviche recipe. It gave it a nice kick, but it's not overbearing with a high heat index. You can still serve this ceviche recipe to your family. You will find the Clamato Tomato Cocktail at Walmart, in the juice aisle, right near the other tomato and vegetable based drinks.
How To Make Shrimp Ceviche
For this pineapple jalapeno shrimp ceviche recipe, we start by chopping all of the vegetables and placing it into a large bowl with the shrimp and crab meat.
Once your vegetables are in, you'll add in your vinegar, lime juice, and Clamato Tomato Cocktail. Do you see my tattoo? It says "porque puedo" which means "because I can". Marc Anthony always inspires me, especially with his hit song "vivir mi vida" which means "live my life", where he reminds us that we all have one life to live, and we should live it as we choose to. My tattoo gives me hope to continue pushing through, even when it's hard. Like my family in Puerto Rico, when Hurricane Maria hit, they had no choice but to push on!
Be generous with your Clamato Tomato Cocktail and vinegar. You want this dish to be more on the acidic side. Season generously with salt and pepper. I love to add cumin for a little depth of flavor. In the Latin culture, measuring is not how we're taught to cook. We're taught to cook with our eyes and our taste buds. Please, taste as you go -you'll find that you have your own preferences with seasonings etc. Be creative and have fun with cooking!
Once your shrimp ceviche is covered in it's juices and mixed together. Cover the bowl and refrigerate overnight. Giving it time to really infuse will ensure that you have the best shrimp ceviche recipe!
What do you serve with shrimp ceviche?
Served as an appetizer, shrimp ceviche is typically served with twice fried plantains that are brushed with olive oil and minced garlic. You serve a small bowl of shrimp ceviche and a side of platanos (plantains) or if you're like me and can't find green plantains perfect for frying, you can serve it with tortilla chips.
This shrimp ceviche recipe is meant to be shared with family and friends. I guarantee you will have some Clamato Tomato Cocktail left over after making a batch of ceviche. Use the remainder of the juice to make some Michelada to serve to friends!

- 1 ½ pounds of cooked medium shrimp, deveined and tail off 4 ounces of crab meat, chopped
- 1 small cucumber, finely chopped
- ½ cup of red onions, finely chopped
- 1 red bell pepper, finely chopped and seeds removed
- 1 green bell pepper, finely chopped and seeds removed
- 1-2 jalapenos, finely chopped and seeds removed (or keep for more heat)
- 2 medium tomatoes, roughly chopped
- 4 ounces of pineapples, chopped
- ¼ cup of green salad olives with pimentos, finely chopped
- ½-1/4 cup of cilantro, finely chopped
- 2 cups of Clamato Tomato Cocktail Picante
- 1 cup of white vinegar
- 2 tablespoons of salt. or to taste
- 1 teaspoon of black pepper
- ½ teaspoon of cumin
In a large bowl, combine ingredients and cover. Refrigerate overnight before serving. Enjoy!
