Light and airy, this arroz con maiz recipe is a simple white rice recipe with sweet golden corn in it.
How To Make Arroz Con Maiz (White rice with corn)
For this recipe, it's really simple. We're throwing in freshly rinsed white rice, water, and a generous amount of salt into a large pot over high heat (for now).
(Quick question: Have you ever tried the spoon method? The method where the spoon stands tall if there's enough white rice to water ratio? (I fail it each time haha! I'm blaming the spoon.))
Next we're adding in a cup of sweet corn to the white rice mixture. I used frozen, but you can use fresh or canned (drain first).
This step is optional, I recently fell in love with the "Better Than Bouillon" brand of broth base, and I used the vegetable kind, just a teaspoon goes a long way, but you can use a chicken bullion cube if desired. Make sure to mix it in well. It elevates the simple arroz con maiz to a whole new level!
After that we're adding in our seasonings and freshly chopped cilantro. Now comes to fun part, we're going to bring it all to a soft boil, and let it boil until most of the water becomes evaporated. Be sure to stir often.
You'll see that little pockets start appearing in the pot. This is what you want, not all the water completely gone, but just like this.You can see the white rice and the corn pop through with small bubbles surrounding it. My mom likes to add wax paper as an extra layer of sealing to her pot before topping it with a tight-fitting lid, but it's optional. Be sure to top your pot containing the white rice and corn with a tight-fitting lid. Turn your heat to medium low (about a ¾ out of 10) for 22-25 minutes, without lifting the lid. Once your timer comes off, turn off the heat and let your arroz con maiz (white rice with corn) sit for five minutes before gently "fluffing" it.
