Instructions
Season pork with salt, pepper, oregano, and garlic powder.
Warm oil over medium high heat and add seasoned pork.
Brown pork on all sides, a total of 4-6 minutes.
Remove pork, add more oil if needed, add in onion and bell peppers. Cook, stirring occasionally for 4-6 minutes, or until softened.
Add in garlic, cilantro, and oregano. Cook for 30 seconds.
Add in tomato paste, crushed tomatoes, chicken broth, and vinegar. Stir and bring to a slow simmer.
Return pork, mix and cover.
Reduce heat to medium low and cook for 10 minutes to allow pork to cook through and for flavors to infuse.
Remove cover, stir and taste for seasonings. Add more salt and pepper, if desired.
Fold in cooked pasta.
Serve.
