In a large bowl, season pork chops with sazon, adobo, garlic powder, oregano, and sofrito. Marinate for a half hour or overnight in the fridge.
Take a large frying pan and fill with oil halfway over medium high heat. Once oil is warmed through and hot, add in pork chops (work in batches if using a smaller pan).
Fry pork chops 3-4 minutes per side, and then place on a paper towel lined plate to allow excess grease to drain. Repeat with remaining pork chops.
To test oil, sprinkle a drop of water into pan and if there's a "jump reaction" from the oil, it's ready. You want to make sure the oil is hot enough before adding in the pork chops. But be sure the oil is not smoking, if it is, lower heat or add more oil to cool it down.
