Roasted Asparagus with Tajin Spice
Roasted asparagus is dressed up in lemon with a sprinkling of Tajin seasoning.

Ingredients

⁄2 pound of asparagus
rinsed and ends cut off and removed
2
tablespoons
of olive oil
1
teaspoon
of kosher salt
1
⁄2 teaspoon of ground black pepper
2
tablespoons
of grated Parmesan cheese
2
teaspoons
of minced garlic
1
teaspoon
of Tajin seasoning
4
tablespoons
of crumbled cotija cheese
¼
teaspoon
of lemon juice
optional
Instructions
Preheat oven to 400 degrees.
Add asparagus to a pan, drizzle with olive oil and season with salt, pepper, Parmesan cheese and garlic.
Add asparagus to a pan and roast for 10-12 minutes.
Remove from oven, toss roasted asparagus with Tajin seasoning and cotija cheese. Spritz with lemon juice, if desired.
Serve.
