1poundof ground Italian Sausageor hot if you prefer
¼cupof onionschopped
3garlic clovesminced
2stalks of celery
1poundof brown lentil beansrinsed
6cupsof low sodium beef broth
2cans of diced tomatoes
1bay leaf
2-3teaspoonsof Italian seasoning
3cupsof kalerinsed and chopped, stems removed
salt and pepper to taste
Instructions
Brown sausage over medium high heat on the stove. Add sausage and all of the ingredients, except for the kale and salt. Cook on high 3-4 hours or low 4-6 hours. In the last twenty minutes add in kale and salt to taste. Continue cooking until kale has softened.
